S'mores Brownies

I've probably mentioned a few times how much I loves s'mores, so I decided to start incorporating that into my baking. I attempted cupcakes...didn't love them. So I moved onto brownies and will revisit the cupcakes later.

The brownies are broken down into three parts: graham cracker crust, brownies, roasted marshmallows.

Graham Cracker Crust
6 tbsp butter - melted
1 1/2 c graham cracker crumbs
1/4 c sugar


  • Pre-heat oven to 350* and grease a 9x9 pan.
  • In a medium bowl mix the graham cracker crumbs and sugar.
  • Stir in the melted butter/
  • Press into pan.
  • Bake for 8-10 min
Brownies
1 stick of butter
1 1/8 c sugar
2 eggs
1/2 + 1/8 c cocoa powder
1/2 tsp salt
1/2 tsp baking powder
1 tbs vanilla extract
3/4 c flour
1/2 c chocolate chips

  • Keep that oven preheated at 350*
  • Beat the eggs, cocoa, salt, baking powder, and vanilla until smooth.
  • In a separate bowl microwave to melt the butter, add the sugar, and stir. Microwave a little longer until hot. It should become shiny as you stir. Heat once more - this will create a shiny top crust on the brownies.
  • Add the hot butter/sugar mix to the chocolate concoction and stir until smooth.
  • Mix in the flour (in three parts) and chocolate chips.
  • Pour batter into the cooked graham cracker crust and bake for 35-45min.
Marshmallow Topping
1 bag marshmallows

  • turn oven to broil.
  • Pour about 1/2 of the bag on top of the cooked brownies.
  • Place in the oven for about 1 min...watch them because they will turn from roasted to fire hazard fast!
  • Let cool, cut, and serve!
